What's In The Bowl
US black angus short rib pan-seared to a caramelised crust. Our house-made truffle soy sauce — not truffle oil, an actual truffle soy we've been developing since 2012. A soft, runny onsen egg that coats everything when broken. Black garlic brown butter rice underneath it all. The foie gras version adds a pan-seared, butter-soft lobe of foie gras that melts into the bowl. It's the single most re-ordered dish we've ever made.
